For the ultimate Meatless Monday challenge, we here at FFF decided to take on the iconic American comfort food recipe: meatloaf.

June Cleaver made meatloaf, as did all women who dared to call themselves housewives in the 1950s. Each woman’s meatloaf was a yardstick to measure her skill as a home cook. Meatloaf has been made in various versions for centuries, but it was the Americans during the Great Depression who added bread and eggs to the dish to stretch their pennies and added ketchup as a topping.

Like almost everyone growing up in America in the 50′s, 60′s or 70′s, I ate my weight in meatloaf as a child. To this day, when anyone says “meatloaf,” the smell, taste and texture of this comfort food fills my senses.

So, we said to ourselves, “Could we remake this comfort food classic without meat but with as much flavor and comfort as the original hamburger dish?” Our answer: “Absolutely.”

I made about a dozen versions of this dish and there are two secrets to our final fabulous dish. First, add diced cooked dates. The dates add a rich taste and sticky texture that are necessary to replace hamburger. Second, use the American classic A-1 steak sauce. When I made previous versions of this, everyone wanted A-1 to drizzle on top of their slices. So == light bulb goes on == why not add this raisin-y, flavor-packed sauce right in with the loaf mixture?!

The combination of ingredients and flavors in this final version are astounding. The texture is rich, moist and firm and holds together while cooking and slicing.  This is one of my favorite veggie makeover dishes of all time. Truly remarkable. Meatless Monday: Spaghetti Squash alla Low-Carb-onara

We love the challenge every Meatless Monday of making an enlightened vegetarian dish out of a traditional meat dish. So, it was inevitable that we would revamp the classic pantry standby dish – Spaghetti alla Carbonara.

The Anne half of Team Triple-F needs to avoid gluten, but rather than simply replacing the semolina flour-powered spaghetti with another grain-based wheat pasta substitute, we thought we’d use spaghetti squash instead, making it low-carb to boot as a bonus (not to mention even more nutritious). Then all we did was replace the bacon with a vegetarian “bacon.”

This is Anne’s recipe, but Donna worked on it as well. Donna’s first batch of squash had to be thrown out – it was a soggy, overcooked mess. Donna *highly* recommends cooking the squash at 400 degrees for exactly 30 minutes. Exactly. Any less and the squash will be too tough, and any more and the squash will be a watery soggy mess.

Meatless Monday: Enlightened Braised Cabbage Rolls Recipe with Roasted Red Pepper Finishing Sauce

One of the ultimate comfort foods – slowly simmered stuffed cabbage rolls – has the power to take me back to the early 80′s  when I was a new bride learning to cook for my little family. So, I wondered if I could make a more enlightened vegetarian version that was just as tasty and comforting for Meatless Monday.

Cabbage seems like it was invented for making cabbage rolls – they have a perfect taste and texture for these. And a huge bonus: cabbage is packed with nutrients. Cabbage is one of the most versatile cruciferous veggies. We use it in so many strikingly different ways and transform it into so many different substances: raw cabbage in slaws, boiled cabbage with sausages, pickled for sauerkraut, and on and on . . . .

The secret to the success of this recipe is in the braising: I used a rich vegetable broth ( I like Kitchen Basics vegetable stock) with a little vinegar and brown sugar and My, Oh My! did my house smell yummy! These turned out glorious: sweet and tart and flavorful – they just melt in your mouth!  I promise you won’t miss the meat – not even a little bit!

Meatless Monday: Asian Tofu Lettuce Wraps

Ever since discovering the Asian Lettuce Cups made with ground turkey on Kalyn’s Kitchen for my Phase One Bonanza, this has become one of my favorite recipes. Seriously, I’ve probably had this 6 times in the last month, and will probably continue to do so  forever, at least once a week or so. It’s that good.

But I do try to avoid meat as much as I can (and have been contemplating returning to being a full-time vegetarian). I had to eliminate soy from my diet due to some sensitivities in my breastfeeding daughter (along with gluten, eggs  and peanuts), so my protein substitute choices were limited. We recently got re-tested and found that she is fine with soy now! So I’ve been making up for lost time, and thought this was one recipe that might also be equally tasty in vegan form.  I tried it out last night – success! And perfect for Meatless Monday. The Meatless Mondays Movement is gaining momentum! Eating less meat makes sense in every possible way: health-wise, environment-wise and (note the emphasis of our blog) budget-wise!

We endorse Michael Pollan’s philosophy: “Eat food. Not too much. Mostly plants.”

To do our part, we will feature a delicious vegetarian recipe every Monday that traditionally was made with meat, but we will do a makeover and make it meatless: Meatless Monday Makeovers! Today we feature the classic meat pasta sauce – Bolognese.

Red Lentil Curry – a Pantry Go-To Fave

Whenever I haven’t had the chance to shop in weeks, am running low on produce, and need something hearty yet nutritious and suitable for everyone in the family, this is one of my most beloved go-to items.  Lentils are full of iron and fiber and protein, this is flavorful and spicy and rich (the heat can easily be adjusted for your own preferences; my 20 month old likes it spicier than her daddy does, in fact). The only fresh items you need are onions, garlic and ideally ginger – but the ginger can be frozen or, in a pinch, powdered. If you are in a more-than-usual near-crisis stage and need to get dinner on the table PRONTO, this Black Bean Puree Recipe can’t be beat both time- and flavor-wise! This is a new twist on a plain burrito – so pretty, fun and  different! It takes ten minutes max to get this on the table, and that includes opening the cans!

Black beans are nutitional powerhouses, and so yummy and easy to work with. Short of takeout,  I challenge anyone to find a healthier speedy dinner.
