Healthy! Easy! Yummy! Sweet Potato Chips

Don’t you just LOVE it when one of your favorite foods goes on sale? Yesterday sweet potatoes were 88 cents a pound at my favorite store – so I loaded up and decided to try making chips out of them since specialty chips in the gourmet section of the store are so, so spendy – about $5.00 a bag.

These turned out great and this sweet potato recipe is so easy that I was hesitant to even put it on this blog. But hey! I wanted to share these chips with all my fab frugal friends. If you’re looking for healthier super bowl snack recipes, you have come to the right place!

At the very end, you can make them either sweet or savory, depending on your mood – just season while they’re still hot with either cinnamon sugar (sweet version) or salt and a savory spice like cumin (savory version).

What’s a better meal/activity for bonding with friends and family than fondue? It has been one of our family’s favorites for 30 years – fondue is fun, melty, cheesy goodness! And, with a few updates from the 21st century – this Swiss classic goes from good to ***Wow!***

I tweaked the ’70s classic three ways to make it more frugal and ramp up the flavor:

The first improvement is to toss veggie cubes in a little olive oil, S & P and then roast at high heat. I did 30 minutes at 425 degrees, stirring once at halfway. So much more flavor than just steamed! Why did I EVER think steaming veggies was a great idea?!

Second, if you use today’s amazing new flavorful cheeses available at any grocery store  your fondue improves dramatically. To keep it frugal, I used just a few ounces of an amazing tasting but expensive cheddar for flavor and then Monterey Jack to give the fondue a smooth, creamy melted texture.

Third, you can make fondue more budget-friendly by replacing the wine with cider or broth with just a splash of white or red wine vinegar. The apple cider- cheddar flavor combo is fondue-licious!

Warm up a Cold Winter's Night with Weeknight Chicken Posole Recipe

What could be better on a chilly winter’s night than a bowl of smoky, earthy posole?

Posole is a spicy corn stew and an ancient food that originated in southern Mexico – it has withstood the test of time because it is so easy and flavorful. The native peoples considered corn to be a sacred plant and so posole was a popular and revered dish. I used poblano chiles in this, which are very mild. If you want heat, roast a few jalepenos, too!

This is an incredibly easy version – from grocery bag to table in 45 minutes!
