Here’s an idea for all you moms out there trying to come up with healthy snack summer recipes for the kiddos in response to the constant good ole’ summertime refrain: “Mom, I’m hungry!” (Or for anyone else looking for rich sugar-free treats!)
These cookies are so surprisingly delicious that you will forget that they’re actually good for you. I promise. These cookies are packed with high-protein ingredients: an egg, almond butter, tofu, whole wheat flour, and oats. Seriously, we should all eat more oats, shouldn’t we? These cookies rival the high-fat, high-white sugar versions that are part of American snack time cuisine and culture. They are that good.
Keep the cookie jar packed with these healthy little gems. You may even catch yourself saying “Kids – please eat more cookies!”

The American classic onion soup dip created by Lipton has long been a Super Bowl recipe staple. I decided it was time for an upgrade! Caramelized onions are easy, cheap and delicious, so remaking this dip was a snap! Onions become a whole new veggie after they have been slowly caramelized – sweet and rich! YUM!
If you have never tried caramelizing onions, I suggest you drop whatever it is you are doing and RUN QUICKLY to your nearest grocery store and stock up on yellow onions. Try this recipe and you will be a caramelized onion convert!
Then, I made crackers. I promise you if you make these, someone will be impressed. “You made crackers? Wow!” is the amazed response I get most often. People are always impressed – but they don’t realize how ridiculously easy these are to make. And – so, so delicious – Wheat Thins have nothing on these crunchy delights!

Healthy! Easy! Yummy! Sweet Potato Chips
Don’t you just LOVE it when one of your favorite foods goes on sale? Yesterday sweet potatoes were 88 cents a pound at my favorite store – so I loaded up and decided to try making chips out of them since specialty chips in the gourmet section of the store are so, so spendy – about $5.00 a bag.
These turned out great and this sweet potato recipe is so easy that I was hesitant to even put it on this blog. But hey! I wanted to share these chips with all my fab frugal friends. If you’re looking for healthier super bowl snack recipes, you have come to the right place!
At the very end, you can make them either sweet or savory, depending on your mood – just season while they’re still hot with either cinnamon sugar (sweet version) or salt and a savory spice like cumin (savory version).
