
I recently discovered a fab side dish that you can throw together with an ingredient that you can always keep in your pantry: canned white beans. So, if company shows up at the last minute, you can always grill something and smash some beans!
This dish has the same ‘comfort’ factor as mashed potatoes, and yet is so much healthier. Beans are almost always in the budget-friendly Top Ten Healthy Foods and Super foods lists. They are packed with protein and are a very frugal protein source.
This ‘mash’ has much more flavor than mashed potatoes, and is so, so , soooooo much easier to make! No peeling and boiling chunks of potatoes. I am very excited to have discovered this fun and flavorful side dish, and I couldn’t wait to share it with all of you! It will become one of my top side dish standbys.

The 2009 Blueberry Festival continues. No, that’s not a typo in the title. Try it if you’re skeptical! It’s a bit like a raspberry square, with graham crumbs standing in for the oats, and macerated blueberries – with a few extra flavors – instead of the raspberry jam. I found that macerating the berries about half an hour or so before starting the rest was plenty of time, but you could do this step even earlier if necessary.

If lemons and blueberries are heavenly matched in a dessert, why not in a drink?
I wanted to make a healthy, flavorful refreshing sugar-free drink and blueberries, naturally, came to mind. The trick is to let the mint leaves steep in the hot liquid and then remove them before serving. Mint really adds a punch! I also added lemon zest, one of my new favorite ingredients. But make no mistake – blueberries are the star of this drink, and lemon and mint are used only to enhance the blueberry taste.

One of the best things about summer: BLUEBERRIES!
We here at fabfrugalfood are passionate about in-season produce, and will be posting some of our favorite blueberry recipes in the next few days. Blueberries are fabulous (seriously, what is more delicious than a fresh ripe blueberry?) and, they are low-glycemic little nuggets packed with nutrients! Enjoy!
I have tasted many yummy sweet/savory salsas – you know the kind – traditional salsas with a touch of sweetness added in with mangoes, pineapples, etc. So, I thought “Why not blueberries?” I found that blueberries work well with smoky flavors such as chipotle chile powder and smoked paprika. A touch of cinnamon and nutmeg are also delicious.

Tomato Mozzarella Fans
Sometimes it’s all about the presentation. You can make a frugal dish look fabulous by trying something a little different.
Tomatoes and mozzarella can look pretty blah and ho-hum on a plate. I bought some very nice ripe medium sized tomatoes and was going to try serving them with spinach and not basil, because spinach is frugal.
I got the idea of serving them fan style to jazz up the look, and they turned out so pretty – don’t you agree?
Just slice them into thin slices from the top but DON’T cut all the way through the bottom. Cut mozzarella and spinach in half-moon shapes and insert into the slices. Drizzle a vinaigrette on top and VOILA! fancy tomato fans!

I have really enjoyed grilling this summer, especially veggies. This recipe was created by accident – I originally thought of just roasting the zucchini and then chopping it and mixing it with a little cheese. But, the grilled zucchini planks just looked so pretty off the grill, I decided to leave them whole and roll them up with a little soft cheese inside.
